Stevioside, the sweet substance from Stevia rebaudiana Bertoni, was hydrolyzed under a mild condition with 0.4% of hydrochloric acid in aqueous methanol at reflux for 5 hours. Steviol, the genuine aglucon which has been only obtained by enzymatic hydrolysis of stevioside, was afforded in 49% yield. The partial hydrolyzates of stevioside, 13-O-β-D-glucosylsteviol, its β-D-glucosyl ester and steviolbioside were also detected in the hydrolyzates along with steviol.
